Denver Public Schools and Ultragrain®: Showcasing Innovative Whole Grain Cooking and Baking

The Denver Public Schools (DPS) are setting the standard in school nutrition by implementing a “back to scratch” philosophy across their entire menu. When it came to baking they initially blended whole wheat and refined flours in-house to meet the 51 percent requirement, but they noticed that both the taste and texture of their finished baked goods had properties more akin to traditional whole wheat products, which students didn’t like as much. Looking for a solution that could help them reach their goals for whole grain nutrition, they turned to Ultragrain®.
